Red Wine Poached Pears

Easy to do, does not require fancy cooking skills, can be made in advance, looks amazing and taste is incredible!!!
The deep burgundy color that the pears get from soaking in wine, make them a masterpiece on a plate, over a white cloud of whipped cream, it's just the best!

Red Wine Poached Pears

Ingredients

1 bottle red wine, dry

1 cup sugar
-
1 cinnamon stick
-
4 green cardamom pods
-
1 star anis
-
1 orange zest and juice
-
8 pears, Barlett or Bosc

2 cups (500 ml) heavy whipping cream
-
½ cup icing sugar
-
1 vanilla bean or 2 tsp vanilla extract

Cookies crumbles (optional)

Directions
- In a large pot, boil the wine, sugar, the juice and zest of one orange and spices together. In the meantime, peel and core the pears. Add the pears to the hot wine and add water just enough to cover the pears. Cook on a low simmer for about 20 min or until tender. Let poach for at least an hour.
- Take the pears out of the wine sauce and boil down the liquids until you get a syrup. Take out the spices and orange zest and let cool.
- Whip the whipping cream and the vanilla seeds grated from the pod and start whipping on low speed until it’s gaining volume, then change speed to medium high until it starts thickening. Add the sugar, a few Tbsp at the time while continuing mixing. Stop mixing when you see soft peaks and the cream looks stiff.
- Serve the pears with vanilla whipped cream and covered in syrup.
Optional: break the cookies in crumbles and sprinkle all around the plate for a crunchy contrast
